At $50 with the potatoes on the plate, it is the least expensive full beef dinner on the ninth floor during its run, well below the 6 oz filet at $62 that anchors the standing steak list.

Prime rib is not a ribeye, and why that matters

Prime rib and ribeye come from the same section of the animal, the rib primal. The difference is the cooking. A ribeye is cut into a steak first and grilled hard and fast. Prime rib is roasted whole, slowly, as a large bone-in roast, and sliced to order after it rests. The result is a softer, more evenly pink slice with a thin seasoned crust on the outside edge and the juices collected as au jus.

That is why prime rib is a feature rather than a nightly item. A roast has to be cooked as a whole and sold the same evening, which is what while supplies last means in practice. When the last slice is gone, the kitchen does not put another roast in, and the table moves on to the standing menu. The horseradish crème is the traditional partner because the roast is milder than a grilled steak and takes to a sharp condiment.

How to make sure you get a slice

Book early in the evening. Friday service runs 11 AM to 10 PM and Saturday runs 4 PM to 10 PM, and the roast is finite. A 5:30 or 6 PM reservation on either night is the safest way to be seated while the prime rib is still being carved. A Friday or Saturday in the district

The two nights the prime rib runs are the two busiest nights in the Arlington Entertainment District, and Mercury’s location on E Lamar Blvd, north of the stadium lots, makes it the easier dinner on either. Globe Life Field is about a mile away, AT&T Stadium about a mile and a half, and a Saturday concert or a Friday Rangers game does not close the roads to the tower.

The sun sets at about 8:15 PM in August and 7:35 PM in September, and the main dining room’s curved window wall faces west and southwest over the district. A 6 PM prime rib dinner in late August puts the slice on the table with the sun still up and dessert arriving as the lights come on at Six Flags.

Prime rib the rest of the year

Outside that run, prime rib is not on the standing menu. It returns as a special from time to time, and the restaurant does not publish dates in advance.
