Start with what the menu says
The Mercury menu does two things for a gluten-free guest. It marks two desserts, the Crème Brûlée and the Chocolate Torte, as gluten free. And it carries a standing notice asking guests to tell the server about food allergies before ordering. Nothing else on the menu is labeled, which means everything below is about what is naturally free of gluten and what to ask about, not about certified items.
One thing to be clear on: Mercury has not described its kitchen as a certified gluten-free facility, and nothing here should be read that way. Steaks, seafood, sauces and sides come out of the same kitchen. For a guest with celiac disease, the conversation with the server before ordering is the important step, and it is one the menu itself asks you to have.
The steaks: naturally gluten-free, finished with butter
A steak is beef, salt and heat, and the steaks at Mercury come to the table with a butter rather than a breaded crust or a flour-thickened sauce. The Center-Cut Filet Mignon, 6 oz at $62 and 8 oz at $74, is finished with herbal butter. The Bone-In Ribeye at $90 has Dijon butter. The 8 oz Wagyu Filet at $105 has an herbal compound butter. The Hand-Cut Ribeye at $75 and the Dry-Aged 36 oz Porterhouse at $175 with bone marrow confited shallots round out the beef.
| Cut | Price | Finish | Ask about |
|---|---|---|---|
| Center-Cut Filet Mignon 6 oz / 8 oz | $62 / $74 | Herbal butter | Butter ingredients |
| Hand-Cut Ribeye | $75 | Steak alone | Any seasoning |
| Bone-In Ribeye | $90 | Dijon butter | Mustard base |
| 8 oz Wagyu Filet | $105 | Herbal compound butter | Butter ingredients |
| Dry-Aged 36 oz Porterhouse | $175 | Bone marrow confited shallots | Garnish |
| 27 oz Wagyu Long Bone Ribeye | $210 | Crispy onion strings, Dijon butter | Onion strings are fried; ask to omit |
| Double-Bone Pork Chop | $59 | Thyme-onion-bacon jam | Jam ingredients |
Sauces, rubs and toppings to check
The enhancement list is where gluten can hide, and it is where the server’s answer matters. Of the four $4 sauces, Chimichurri is herbs, garlic, oil and acid and is the one least likely to involve flour; Béarnaise is butter and egg yolk; Demi-Glace is a reduced stock; Rye Whiskey Cream is a cream sauce built on whiskey. Ask about each rather than assuming, since thickeners and bases are not printed.
The two rubs, Espresso at $3 and Cajun Sear at $3, are spice-based. Oscar Style toppings of lobster at $20, crab at $16 or shrimp at $14 are shellfish over the steak. The Jumbo Lump Crab Cake at $12, like most crab cakes, is bound with something, so ask what. Truffle Butter at $8 and the Gorgonzola Crown at $14 are dairy. The toppers page lists every enhancement with its price.
Sides and starters
Several sides list no flour or breading in their descriptions: Grilled Asparagus at $18, Broccolini at $17, Whipped Potatoes at $14, Baked Potato at $14, Burgundy Mushrooms at $15 and Brussels Sprouts at $17, which contain bacon. Creamed Spinach at $16, Corn Risotto at $16, Mac-n-Cheese at $15 and au Gratin Potatoes at $16 involve dairy and possibly thickeners, and the Hand-Cut Fries at $11 are fried, so ask about all five.
Among starters, the Gulf Shrimp and Jumbo Lump Crab Ceviche at $23 is served with lavash, which is a flatbread, so ask for it without. The MCA Shrimp Cocktail at $19 is chilled shrimp with avocado-lime purée and cocktail sauce. The Chophouse Calamari at $17 and the Filet Mignon Cigars at $17 are both fried and are the two starters to steer around. The Caprese Salad at $18 and the Wedge at $18 are the safer salads; ask about dressings and croutons on the Caesar.
Dessert: the two marked items
This is the one course where the menu does the work. The Crème Brûlée at $15 and the Chocolate Torte at $15 are both printed with a gluten-free mark. The other desserts, including the Key Lime Pie at $16, the Cherry and Pecan Bread Pudding at $16 and the cakes at $17, are built on crusts, bread or flour.
After dessert, the coffee list at $4 to $10 and the port and dessert wine list from $12 give a gluten-free guest a full last course. The desserts page covers all of it. A guest who is both gluten-free and vegetarian will find the vegetarian options page useful alongside this one.
How to book a gluten-free dinner here
Say it twice. Add a note when you reserve on OpenTable or mention it when you call 817-381-1157, and then repeat it to your server before ordering, which is what the menu’s allergy notice asks. Servers at Mercury handle this routinely at a table where one guest has a restriction and the rest are ordering the porterhouse.
For a private dinner in the Boardroom, which seats 8 to 20, private menus can be tailored, and a gluten-free course can be planned in advance through the private dining request; responses take up to 48 hours. The steak dinner page walks through the courses of a full dinner, most of which a gluten-free guest can order without adjustment.

Frequently asked questions
Is Mercury Chophouse a gluten-free restaurant?
No. It is a steakhouse whose steaks and chops are naturally gluten-free and whose menu marks two desserts as gluten free. The kitchen is not described as a certified gluten-free facility, and the menu asks guests to notify their server of food allergies before ordering, which is the step to take.
Which desserts at Mercury Chophouse are gluten-free?
Two are marked gluten free on the menu: the Crème Brûlée at $15 and the Chocolate Torte at $15. The Key Lime Pie, the Cherry and Pecan Bread Pudding, the New York Cheesecake, the Italian Cream Cake, the Strawberry Cake and the Brownie are not marked and are built on crusts, bread or flour.
Are the steak sauces gluten-free?
The menu does not label the sauces, so ask your server about each. Chimichurri is herbs, garlic, oil and acid and is the least likely to involve flour. Béarnaise, Demi-Glace and Rye Whiskey Cream have bases and thickeners that are not printed. The Espresso Rub and Cajun Sear are spice rubs applied before grilling.
Can I order the long bone ribeye gluten-free?
Ask for it without the crispy onion strings, which are fried, and confirm the Dijon butter with your server. The 27 oz Wagyu Long Bone Ribeye at $210 is otherwise beef and butter. The same approach applies to any steak: the meat is naturally gluten-free and the garnish is the part to check.
Which starters should a gluten-free guest avoid?
The Chophouse Calamari at $17 and the Filet Mignon Cigars at $17 are both fried and are the two to skip. The ceviche at $23 comes with lavash, a flatbread, which can be left off. The MCA Shrimp Cocktail at $19 and the Caprese Salad at $18 are the starters that list no bread or breading.
Can Mercury Chophouse accommodate a gluten-free guest?
Yes. The kitchen does its best to accommodate gluten-free requests. The restaurant asks that you mention it when you make the reservation, through the special requests field on OpenTable or by calling 817-381-1157, so it can have options ready. If it is a medical need rather than a preference, say so, because it changes how the kitchen handles the plate.
