How much layover you really need

Leaving DFW for a meal is a math problem before it is a menu decision. The drive itself is short. The parts around the drive are not. You have to get from your gate to a rideshare pickup or the rental counter, and on the way back you have to return the car or get dropped off, clear security again and walk to a gate that may be in a different terminal.

Here is a working budget for a seated dinner at Mercury Chophouse. The restaurant times are ours; the airport times are estimates you should check against your own terminal and airline.

That adds up to roughly three and a half to four and a half hours. A four-hour layover works if nothing goes wrong. Five hours lets you order the bone-in ribeye and not watch the door. A three-hour layover does not work, and we would rather say so than seat you for a meal you cannot finish.

The drive from the airport

From either DFW terminal side, take Highway 360 south. The Lamar Boulevard exit is about a mile east of the restaurant; head west on Lamar and the Brookhollow Two office tower is on the boulevard at 2221 E Lamar. Park in the garage or the outdoor lot at the tower, walk into the lobby and take the elevator to the ninth floor, Suite 910. The glass doors are lettered with the restaurant name.

Two things can stretch the drive. Weekday rush hour on 360 runs both directions, so a 5 PM departure from the airport can turn 15 minutes into 30. And on Cowboys, Rangers and concert nights the Entertainment District fills up. Mercury sits on the north edge of the district, off the stadium parking lots, so you are not driving through the core to reach it, but Lamar itself carries game traffic. Which hours fit which layover

The single most common way a layover dinner fails is arriving when the door is locked. Check the day first.

A weekday layover that puts you here between 11 AM and mid-afternoon lands in lunch service, which is the faster meal. The lunch menu carries a Marinated Steak Sandwich at $19, a Chophouse Burger at $17, a 6 oz Center-Cut Filet Mignon at $54 and a Wagyu London Broil at $65. What to order when the clock is running

Tell the host your flight time when you book, and tell your server again when you sit down. That is the most useful thing you can do. The kitchen cannot promise a pace, but a server who knows you have a 9:40 PM boarding will course the meal differently than one who thinks you are lingering over the view.

For a dinner you can finish in an hour and a quarter: Filet Mignon Cigars at $17 or the Salmon Mousse at $18 to start, then a 6 oz Center-Cut Filet Mignon at $62, the Hand-Cut Ribeye at $75 or the Seared Sea Bass at $57 with corn risotto. Sides are shareable; the Whipped Potatoes at $14 and Broccolini at $17 arrive with the steak. If dessert would push the clock, the Crème Brûlée at $15 is quick, and coffee is $4.

Skip the 27 oz Wagyu Long Bone Ribeye and the 36 oz Dry-Aged Porterhouse unless you have the five-hour version of the layover. They are meals to sit with.

Why leave the airport at all

Because the room is on the ninth floor of an office tower with a curved wall of floor-to-ceiling windows, and from a table at that wall you can see AT&T Stadium, Globe Life Field and the tower at Six Flags Over Texas laid out below. There is a grand piano by the windows near the bar, played on select evenings, and a glass-front wine wall at the entrance. It is a different hour than one spent at a gate.

One honest caution. The dress code is business casual: collared shirts and sports coats encouraged, unripped jeans welcome, and graphic T-shirts, baseball caps, hoodies, athletic wear, flip-flops and slides not permitted. Travel clothes often fall on the wrong side of that line, and management can decline service. If you are flying in a hoodie and running shoes, change in the terminal before you leave, or read the dress code answer first and decide.
