Three ways to seat a group
Organizing dinner for people who flew in is different from organizing dinner for friends. Nobody knows the city, somebody is always late from the hotel, and the person paying wants one bill they can expense. Mercury Chophouse has three seating options, and the right one depends on the head count.

The Boardroom is a real private room behind a frosted glass door, with a fully integrated AV system and a large screen, which matters if the group is a sales team with slides or a family with a photo reel. The semi-private page explains the 21 to 28 range.
The rules that matter when you are paying from out of town
These are the restaurant’s published policies, and the organizer should know them before the group sits down.
One check. For groups of 12 or more in the dining room, and for any size group in the Boardroom, a single check is presented. No split checks. If colleagues need to settle up, do it among yourselves afterward.
Gratuity. A 20% gratuity is added to parties of 6 or more.
Food and beverage minimum. Large parties of 10 or more are subject to a minimum based on party size. The dollar figure is not published; it is quoted in the written proposal you receive after submitting a request.
Split plates. A $25 fee applies to composed entrées shared between guests.
Response time. Private dining requests receive a reply within 48 hours. Deposit and cancellation terms are set out in the proposal rather than on the website. The large party policy page collects all of this in one place.
Getting a group here from the hotels
Most visiting groups stay in the Entertainment District, and the restaurant is on its north edge on East Lamar Boulevard, at the top of the Brookhollow Two office tower. Drive times outside event traffic:

Two or three rideshares from a district hotel arrive within minutes of each other. Everyone parks free at the tower, in the garage or the outdoor lot, and rides the elevator to the ninth floor, Suite 910. Because the building sits off the stadium lots, a group can leave a game or the convention center and reach the table without crossing the district core.
Feeding a mixed group
Visiting groups are rarely all steak eaters. The dinner menu covers the spread: a 6 oz Center-Cut Filet Mignon at $62, Cedar Plank Grilled Salmon at $48, Chicken Saltimbocca at $42, Tortellini Bolognese at $32 and Grilled Chicken Pasta at $29. Sides are sized to share across the table, $11 to $18 each. To open, the Land & Sea Sampler at $26 per person puts calamari, a filet mignon cigar, a crab cake and shrimp cocktail in front of everyone at once.
For the Boardroom and semi-private bookings, menus are tailored to the group, which is how you handle a table with two vegetarians, one gluten-free guest and a client who wants the 36 oz porterhouse. Say so on the inquiry form. The menu asks guests to notify their server of allergies before ordering, and that goes double for a group order placed by an organizer.
Timing around the district's calendar
Two dates trip up visiting organizers. The first is Sunday: the restaurant is closed, and most Cowboys home games are on Sunday, so a group in town for the game should eat here Saturday night or Friday. The second is Saturday itself, which is dinner only from 4 PM; a Saturday group lunch is not possible. Weekdays run from 11 AM, so a conference group can book a lunch meeting in the Boardroom on a Tuesday and a dinner on a Thursday.
Rangers weeknight games start around 7 PM and concerts at both stadiums fill the roads by 6. Ask for a table time that gets the group seated before the traffic peaks, or after it clears. The conference group dinner page covers the convention center schedule specifically.
How to start
For 8 or more, submit the private dining request with the date, head count, any AV needs and the name of the person paying. A reply with a proposal, including the minimum and any deposit terms, comes within 48 hours. For a party under 8, book on OpenTable or call, and mention that the group is visiting so the host can note it.
